Le lait provient de brebis Manchego, principalement de Castilla y Le\u00f3n et de Castilla La Mancha.\n\nLa consommation en Espagne reste stable, entre 5 000 et 6 000 tonnes par an, tandis que les exportations ont augment\u00e9. Ce lait est ensuite ferment\u00e9 \u00e0 l&#8217;aide de cultures lactiques pour lancer le processus de production. Apr\u00e8s fermentation, le caill\u00e9 est caill\u00e9 et d\u00e9coup\u00e9, ce qui constitue une \u00e9tape cruciale dans la formation du fromage. La p\u00e2te obtenue est ensuite chauff\u00e9e et moul\u00e9e pour donner au fromage la forme souhait\u00e9e. Des s\u00e9choirs sp\u00e9cifiques sont utilis\u00e9s et la distribution de l&#8217;air se fait au moyen de buses sp\u00e9ciales. Le syst\u00e8me d&#8217;empilage et de manutention est \u00e9galement diff\u00e9rent dans chaque fromagerie, mais dans tous les cas, l&#8217;un des objectifs \u00e0 atteindre est l&#8217;homog\u00e9n\u00e9it\u00e9 du produit et, par cons\u00e9quent, la distribution minutieuse de l&#8217;air et sa vitesse afin de ne pas endommager le fromage et d&#8217;obtenir une production
