Les olives des premi\u00e8res r\u00e9coltes d&#8217;octobre et de novembre offrent des huiles vertes et intenses de qualit\u00e9 sup\u00e9rieure. L&#8217;importance de la r\u00e9frig\u00e9ration dans l&#8217;extraction de l&#8217;huile est expliqu\u00e9e ci-dessous.<\/p><h2>Comment l&#8217;huile est-elle extraite des olives ?<\/h2><p>Le processus d&#8217;extraction de l&#8217;huile le plus courant se compose de plusieurs \u00e9tapes : broyage, battage, d\u00e9cantation et centrifugation. Le battage est l&#8217;\u00e9tape au cours de laquelle, gr\u00e2ce au malaxage lent et continu de la p\u00e2te d&#8217;olive, \u00e0 une temp\u00e9rature contr\u00f4l\u00e9e, la coalescence des gouttelettes d&#8217;huile est favoris\u00e9e, ce qui permet la s\u00e9paration ult\u00e9rieure des phases lors de la centrifugation. La raison en est que le temps de transit de la masse dans les m\u00e9langeurs est d&#8217;environ 90 minutes, alors que le temps de transit dans le broyeur est tr\u00e8s rapide et intermittent. Le refroidissement apr\u00e8s le broyage n\u00e9cessiterait donc une puissance instantan\u00e9e plus \u00e9lev\u00e9e, une puissance d&#8217;installation plus \u00e9lev\u00e9e et une plus grande surface d&#8217;\u00e9change dans un \u00e9changeur suppl\u00e9mentaire ins\u00e9r\u00e9 apr\u00e8s le broyage. En revanche, les thermo-m\u00e9langeurs disposent d\u00e9j\u00e0 d&#8217;une enveloppe pour le contr\u00f4le de la temp\u00e9rature, qui serait utilis\u00e9e dans le nouveau syst\u00e8me de refroidissement.<\/p><p>La viscosit\u00e9 \u00e9lev\u00e9e de la p\u00e2te, associ\u00e9e \u00e0 la surface d&#8217;\u00e9change limit\u00e9e des thermobatteries, rend l&#8217;\u00e9change de chaleur difficile, de sorte que l&#8217;alimentation en froid doit \u00eatre assur\u00e9e \u00e0 basse temp\u00e9rature par de puissantes installations de refroidissement qui fournissent du glycol \u00e0 une temp\u00e9rature inf\u00e9rieure \u00e0 0 \u00baC.<\/p><p>La capacit\u00e9 de refroidissement requise dans <a href=\"https:\/\/www.intarcon.com\/fr\/technologie\/r290\/refroidisseurs-r290\/\">l&#8217;installation frigorifique<\/a> se situe entre 5 et 10 kW pour chaque tonne\/heure de capacit\u00e9 de traitement. En d&#8217;autres termes, pour une huilerie ayant une production d&#8217;environ 20 tonnes\/heure, une installation frigorifique de 100 \u00e0 200 kW serait n\u00e9cessaire pour refroidir le propyl\u00e8ne glycol \u00e0 -8 \u00baC.
