For the new installations of Panificadora Amaya, an integral refrigeration and storage system has been provided, consisting of:
Indirect glycol water system with hydraulic unit for rooms and chambers with positive temperatures (>0ºC), using much less refrigerant gas, improving sustainability and reducing maintenance costs.
It includes fermentation chambers with low temperatures and controlled high humidity, using hot water from the cooling tower itself, saving energy and consumption. A glycol chiller was also used for the deep-freezing and freezing chambers, which reaches -30º in 15 minutes.
